LIGHTING
STEP 1:
Set the Roto Draft™ intake and exhaust dampers wide
open (position 5) to let the maximum amount of air in to fuel
the fire.
STEP 2:
Open the lid of the main chamber, remove the cooking grids
using the Broil King
grid lifter provided (Item # 60745).

Make sure the diffuser trays are securely in place.
STEP 3: LIGHTING
Starter Sticks: On top of the diffuser trays place maximum
4lbs.[1.8kg] (per diffuser tray) of hardwood lump charcoal in
a pile. Light the sticks and place them into the top of the
charcoal pile at two or three locations.
Charcoal Chimney: Loosely fill the bottom of the chimney
starter with pieces of newspaper or cardboard. Place the
chimney starter on top of the diffuser tray inside the main
chamber. Add a maximum 4lbs.[1.8kg]. of hardwood lump
charcoal into the chimney. If 4lbs.[1.8kg] does not fit inside
the charcoal chimney excess can be placed onto the
diffuser tray. Light the paper below. Once charcoal is lit, use
protective grill mitts to carefully pour the charcoal on top of
the diffuser tray.
STEP 4:
Allow the charcoal to ignite with the fire door open until
charcoal is aflame. Do not start to cook before the fuel has
an even coating of white ash. Use long handle grill tools to
arrange the lit charcoal in an even layer. Return the grids
into the main chamber with the Broil King
grid lifter
®
provided (Item # 60745).
STEP 5:
Adjust dampers to achieve desired temperature - Start
closing dampers 50 degrees before you reach the target
temperature.
Note: Charcoal burns hotter with more access to airflow,
having the lid open when grilling will produce more intense
heat.
SHUTTING DOWN:
When you're ready to shut down the Broil King® Smoke™
Offset Smoker, close all the dampers and the lid to snuff the
fire out completely
