tion (on the 0 position) (Fig. A).
Products for cleaning:
use only water and biodegrad-
able mild detergent with PH
7-8, using a soft, spongy cloth
and a semi-rigid nylon brush
for the sharp areas of the plate
and the product holder. Do not
clean the machine with jets of
water or steam or similar meth-
ods. DO NOT DISHWASH.
Dismantling:
- the meat table:
1) with the thickness adjust-
ment knob (3) in the safety
position (Fig. A, Fig. D-1),
pull back the meat table (6)
all the way until the travel
limit toward the operator
(Fig. D-2); 2) turn the meat
table release knob (7) coun-
terclockwise all the way (Fig.
D-3) while pulling the meat
table up to the end position,
until you can hear the activa-
tion of the safety device;

carry out the operation
it may be necessary to act
simultaneously also on the
thickness adjustment knob,
rotating it slightly with re-
spect to the safety position.
3) extract the product holder
sliding the meat table from
its support (6) (Fig. D-4);

product holder is down
on the meat table before lift-
ing it off the slicer.
- the blade cover (11):
1)
completely
(counterclockwise) the ten-
sion rod knob of the blade
cover (19); 2) if the blade
cover is tight, loosen it by
applying pressure to the ten-
sion rod knob;

ages! Hold the blade-cov-
er not to make it drop.
3) take out the tension rod
and remove the blade cover;
- the slice deflector (20);
- the sharpener (12):
using the top handle, lift the
whole sharpener up and re-
move it. Turn in direction of
thickness plate (45°) and ex-
tract it completely (Fig. F).

For the cleaning operations
of the sharp areas of the
plates, the product holder
and the blade, use of pro-
tective gloves is also recom-
mended.
Cleaning:
- the blade: press a damp cloth
on the surface of the blade and
move it slowly from the center
toward the outside on the
blade cover side and the oppo-
site side. In the same way dry it
using a dry cloth. NEVER turn
on the machine while cleaning
the blade;
- the safety ring: use a soft
brush to clean the area be-
tween the blade and the safe-
ty ring. Be careful NOT to put
your hands close to the blade;
- the machine body: use a damp
cloth or a sponge. Dry carefully;
- the sharpener: 1) clean the
body with a damp cloth and the
grindstones with a semi-rigid
nylon brush; 2) don't immerse
the sharpener.
Reassembling:
- the sharpener:
unscrew
insert the sharpener from a
position of 45° and turning it
until the pin corresponds to
its specific hole, then lower
the sharpener in its resting

position;
- the slice deflector:
place the slice deflector in its
place;
- the blade cover:
1) replace the blade cov-
er making sure the square
section joint is in its proper
place; 2) insert the tension
rod for locking and screw
completely;
- the meat table:
1) ensure that the locking
knob is fully loose, otherwise
the meat table will not drop
down onto the support; 2)
insert the meat table on the
carriage; 3) tighten the lock-
ing knob; 4) verify that the
carriage slides freely and
check the correct operation
of the thickness adjustment
knob.
BLADE EXTRACION TOOL
If your machine is supplied
with a blade extractor tool
please proceed as follows:

- disconnect the machine from
the electric mains supply;
- remove the plate;
- remove the blade cover un-
screwing completely (coun-
terclockwise) the tension rod
knob (Fig. G);
- ensure the slide deflector
is removed before fitting the
knife remover;
- fit the blade extractor tool
(Fig. H-1), and insert the exter-
nal edge of the ring with atten-
tion, under the ring (Fig. H-2);
- adjust the knife remover cor-
rectly and screw the knurled
knobs completely in to the
