Oven cavity smoke exhaust
During cooking, hot smoke is produced, along with other odours which need to be removed from the flue(s);
it is therefore advisable to position the oven underneath a suitable cooker hood, or to use the special UNOX
hoods and ensure the fumes are channelled outside.
The oven cavity smoke exhaust is located at the top of the back panel of the oven.
Do not place objects and/or materials over the smoke exhausts, as this could compromise the normal
channelling of the fumes. Make sure that there are no objects/materials on top of the smoke exhaust which
could be damaged by the fumes.
Do not leave flammable materials near the smoke exhausts.

N.B for BakerTop ovens:
English
If you wish to channel the fumes using a pipe which does not feature
ventilation or forced expulsion, a separate pipe (with a diameter of at
least 30 mm) must be provided for each flue. None of these should
exceed one metre in length; they should all have a minimum incline of
45° in relation to the ground.
We therefore recommend that the oven is positioned underneath the
UNOX cooker hood, code XC315 (for the ChefTop™ GN 1/1 series),
XC415 (for the BakerTop™ series) or XC515 (for the ChefTop™ and
BakerTop™ trolley series).
condenser, code XC115, or channel the fumes using the UNOX pipe,
code TB1520, taking care not to crush it.
There should be no restrictions along the drain pipe tract.
For BakerTop™ ovens to ensure a greater humidity extraction from
the cooking chamber it is suggested to install inside the chamber the
two metal plates supplied together with the oven, positioning them
beside each exhaust fumes with the proper screws. See the example.
