7. CLEANING
BEFORE CARRYING OUT ANY CLEANING OPERATION, MAKE SURE THE MACHINE IS UNPLUGGED
Do not clean the machine while it is in operation.
The machine should only be cleaned when it is empty and unplugged.
To clean the machine, do not use detergents and instruments which might scratch or damage surfaces. Do not use abrasive
sponges or aggressive/corrosive detergents. Do not use foam products such as oven cleaners.
Do not use pressurized water or steam jets, which could damage the electric plant. Use commercially available products certi-
fied for the purpose. Use suitable individual protective devices while cleaning the machine.
IMPORTANT
The machine must be cleaned after each shift. All surfaces and parts of the machine which might come into contact with
foodstuffs or the areas containing foodstuffs (surfaces inside the tank, the mobile guard, tool, dough splitter and front of the
machine) and external surfaces of the machine, should be cleaned and disinfected.
CLEANING SCHEDULE
Scrape any residual foodstuffs off surfaces using a plastic scraper;
Remove any flour with a vacuum cleaner;
Clean all the surface of the food area and spray area with a soft moist cloth;
With a sponge, clean inside the tools. Use specific liquid products for stainless steel (not cream or paste or anything abra-
sive) which are chlorine-free. Use denatured alcohol to clean fats.
IMPORTANT
After cleaning the stainless steel, particularly the outer surfaces of the machine, wait until they are dry and then protect with
commercially available products( e.g. petroleum jelly). These remove stains, restore the brightness of the steel and protect
against moisture and dirt which might have a corrosive effect.
RECOMMENDATIONS FOR MAINTAINING STAINLESS STEEL
Stainless steel takes its name from its protective properties provided by a thin film of oxide which forms on contact with the
air. Anything which prevents this film from forming and remaining on the surface, such as improper cleaning products, food-
stuffs, salt, etc. may lead to corrosion.
