At this point, set the "delayed start", the "r" symbol appears on the display (Ta), select a value from 0 to 24
hours (h) using the keys +/- (R/S). Once you have selected the desired value, press the SET (P)button to
confirm and save.
Set the fourth and final parameter "delta" of the core temperature probe.
The delta value of the core temperature probe, if other than 0, activates the cooking management with the
core temperature probe. This means that the cooking procedure is controlled by the temperature detected by
the probe, which is inserted into the centre of the product. The value entered (delta) is the maximum devia-
tion allowed between the core temperature and the water temperature.
E.g. if you're cooking a steak at 70°C with the core temperature probe delta = 10, it means that the cooking
water reaches a temperature of 80°C (70°C + 10°C delta = 70°C). The cooking stops when the temperature
probe detects 80°C at the centre of the product.
If this delta value is different to 0 and the core temperature probe is not connected to the machine, the pro-
gram will not start and the machine will go into error mode.
If the delta value remains 0, the machine will operate normally without being controlled by the temperature
read by the core temperature probe.

Every two seconds, three values will appear individually on the display (Tb): the actual tank water tempera-
ture, the time remaining until the end of the cycle and the core probe temperature, if inserted.
When the cooking water reaches working temperature, put the bags of food on the stainless steel racks lo-
cated inside the tank.
Whether a time has been set or not, the machine emits an acoustic signal when it has been reached.
Once the work cycle is complete, switch off the machine, unplug the cable from the mains and empty the
tank to prevent limescale from forming.
Before draining the tank, wait for the water to cool.
During the heating and cooking phases, the machine display cycles through the following values:
1. Water temperature ("°C" LED on)
2. Residual temperature ("time" LED on)
3. If the program involves the temperature probe, the temperature read by the probe ("°C
