PIZZA COOKING
When the oven reaches the required temperature (see point 5 of this paragraph) visible on the
thermometer (fig.14-ref.1) you can put the pizza in the oven for cooking.
1) Manually open the oven door (FIG.3-ref.3) using the special handles (FIG.3-ref.1);
2) To illuminate the interior of the cooking chamber, press the oven light switch (FIG.14-Ref.7);
WHEN YOU OPEN THE DOOR WHILE THE OVEN IS ON, IT IS
IMPORTANT TO KEEP A SAFE DISTANCE TO AVOID BEING BACKED
UP BY THE PURPLE OF HEAT FROM THE OVEN.
3) Place the pizza(s) to be baked inside the oven, using tools suitable for this type of use. It is important
to avoid leaving the door open too long, which lowers the heat in the oven.
4) Close the door and check the cooking through the window (FIG.3-Ref.4);
5) The cooking temperature of the pizza changes depending on whether it is placed directly on the
firestone or on a plate. In the first case, it is advisable to set the cooking temperature at 350÷380°c
with the ceiling burners at maximum (ceiling burner valve knob in position
"maximum power" and the bottom burners at minimum (bottom burner valve knob in position
"minimum power"). In the second case, the recommended cooking temperature is 350÷380°c with the
ceiling burners at minimum (floor burner tap knob in the "maximum power" position);
6) When cooking is finished, open the door and remove the pizza or pizzas and close the door.
THE CHOICE OF THE IDEAL TEMPERATURES FOR COOKING AND
REGULATION OF THE CEILING AND FLOOR BURNERS DEPENDS ON
THE EXPERIENCE OF THE OPERATOR.
IF USED FOR CONTINUOUS USE, DO NOT EXCEED THE
TEMPERATURE OF 350°C IN ORDER TO AVOID OVEN TEMPERATURE
OVERLOAD AND ITS FIRST WEAR.
OVEN STOP
The furnace can be shut down by the operator by scrupulously observing the sequence of
following operations:
1) Switch off the oven by turning the knobs to the position
2) Turn off the oven interior light using the switch (FIG.14- Ref.7);
3) Switch off the main switch (FIG.14-ref.6) the green light will go out;
4) Close the gas supply network shut-off valve;
5) Disconnect the special plug from the oven's power supply wire.
