5 Introduction

Autoclave «STERIL-FOOD» has been designed for sterilization and pasteurization
of canned in sealed cans, both metal and glass.
The autoclave has 10 pasteurization or sterilization treatments (or programs).
All programs are modifiable by the user.

5.1 Temperature / time control

For an optimal treatment, without overtemperature or excessive time, the
autoclave uses two temperature control types:
• Treatments with temperature below 100ºC (Pasteurization)
The autoclave uses Temperature/time control.
The autoclave heats up to the treatment temperature, once reached, time
begins to count.
• Treatments with temperature higher than 100ºC (Sterilization)
The autoclave makes a Fo (F sub zero) control.
This kind of control guarantees that the samples have been exposed to heat /
time for minimal overheating to avoid changing other features such as flavour,
colour, texture...
By selecting a treatment time and a temperature, the autoclave automatically
calculates the Fo to be applied. Without no intervention of the operator.
