5.2 Process performed by the autoclave for a steriliza-
tion/pasteurization cycle
Each program has three parameters:
a. Sterilization time
It's the time (minutes) the sample is under treatment temperature.
b. Sterilization temperature
It's the temperature (degree) at what sample is processed.
c. Counter-pressure
To prevent closed cans burst during the cooling stage, the autoclave creates a
«counter-pressure» of compressed air to counteract the internal pressure
created into the flask due to temperatures above 100ºC.
Usually, a «counter-pressure» of 1.6 bar (relatives) is enough.
d. Cooling temperature
Once the samples have been treated for sterilization, the autoclave subjects
them to a cooling process in order they can be extracted from the autoclave
without the danger of cans bursting by the pressure created inside.
A «Final temperature» of 70 or 80ºC is appropriate. A very low final
temperature may take longer, that's why a final temperature of 80 is more
recommended.
e. Heart probe
The temperature of an autoclave takes a certain time to reach the centre
of a canned jar.

This would cause that the treatment applied to the canned wouldn't be
uniform and therefore a poor sterilization at some points.
To avoid this effect, the STERIL-FOOD uses a «liquids probe» also called heart
temperature because it measures the temperature at the center of the sample.
This probe must be located in a similar flask to the rest of the load, and it
takes as a reference for the autoclave as the temperature inside the load flask.
The autoclave uses this reference to control the sterilization time.
Preparation of the liquids probe:
1. Use a pot similar to the load ones.
2. Fill the pot with water, approximate the same level as the samples.
3. Place the probe through the lid, hermetically closed.
4. Use the hermetic seals supplied.
5. You can prepare reference pots on the basis of the samples supplied.
6. Place the reference can among the samples (It's more convenient to place
it in the top rack).
Before starting the autoclave for the first time:
- The probe must be submerged in the water.
- Make sure that no water enters inside the flask.
