9.7.3 Optimal use of autoclave
Parameters may in some occasions optimize the autoclave performance.
«Purge» parameters (removing the air inside the autoclave).
• For pasteurization cycles: (temperature below 100ºC) the «purge» is of
little importance to reach pasteurization temperature. So it can be reduced to 1
minute and 90ºC.

• For medium temperatures: up to 115ºC a longer air removal phase is
needed.
