Baked apples
Ingredients (serves 9)
9 large apples (e.g. russet)
Marzipan filling
1 can apricots
100 g raisins
300 g marzipan
150 ml apricot liqueur
Almond filling
70 g butter
50 g raisins
3 tbsp. rum
70 g flaked almonds
50 g sugar
1 tsp. cinnamon
Insert the heating element for roasting. Preheat the
oven to 160 °C on the "roaster function".
Preparation
Marzipan filling:
Finely grate the marzipan and mix with apricot liqueur.
Leave the apricots to drain thoroughly and dice. Rinse
the raisins and stir into the marzipan mixture with the
diced apricot.
Almond filling:
Rinse the raisins and soak in rum. Mix the cinnamon
and sugar.
Rinse the apples and remove the core to create a
good sized hole. Place the apples in the roasting dish
and fill half of them with the marzipan filling. Fill the
remaining apples alternately with raisins, almonds,
knobs of butter and a sugar-cinnamon mixture.
Place the roasting dish in the preheated oven and
cook uncovered for 15 - 20 minutes. Serve with a
zabaglione sauce.
