Cleaning and Maintenance
Before performing machine cleaning and/or maintenance operations,
The removal and installation of the machine or any of its parts should be performed on a properly maintained
working table, after any sliding and entangling risks have been removed, and free from any loose materials
Wear gloves to perform assembly, disassembly and / or handling of the knife
Failure and / or poor cleaning and / or disinfection of the machine and / or its detachable parts can cause side
effects such as allergic reactions, irritation, poisoning or microorganisms related to equipment, etc..

Machine cleaning
Wear an apron before performing the cleaning and / or disinfection of the machine
The observance of cleaning timing and procedures is the essential condition for machine safety, hygiene and
production.
The machine must be properly cleaned after every use and upon every processing change.
As already mentioned in the General Information section, paragraph "Environmental Conditions":
Do not wash the machine with water jets, even if they are light.
Do not wash the machine by immersing it totally or partially in water.
Cleaning shall only be performed with water and detergents for washing-machines, and rinsed with clean water. The
machine should be dried with clean cloths and sponges.
For proper machine cleaning, remove the mincing unit from the machine body, and wash all single parts without putting
them in contact to avoid any damage. Should the machine be disinfected, it is recommended to immerse disassembled
parts (details 1, 2, 4, 7, 9, 10, 11, 12 and 13 of page 4) in a solution containing 3% sodium chloride for approx. 30
minutes, and then rinse with warm water and dry up.

Replacement of perforated plate rotation-prevention key
Should the rotation-prevention key be worn down, it has to be replaced. Replacement may be operated using a punch
and hammer.

Replacement of worm screw-knife dragging pin
The pin to be replaced is tightened in the worm screw, and it can be replaced by loosening it with a wrench
counterclockwise.
The new pin should be securely tightened in the worm screw.

Gear lubrication
Moving and drive parts have been lubricated by the machine manufacturer.
If lubricating oil leaks, add the missing quantity.
Every 5-6 years of machine operation, lubricating oil should be replaced.
It is recommended to use FUKS "EP 1500" oil or products having the same specifications.
