OPERATION
3.1
PRELIMINARY CONTROL OPERATIONS
IMPORTANT! Before commencing start-up and programming of
the oven, always check that:
- all electrical and earthing connections have been properly made.
- all steam exhaust connection operations have been properly
made.
- all control operations must be carried out by specialised
technicians holding a proper license.
Before using the oven, clean it as described in point 4.2.
IMPORTANT! Before each start-up of the oven:
- The labels on the oven (fig.3) must be undamaged and legible,
otherwise they must be replaced; fastening elements must be
present and working properly.- Any damaged or missing parts
must be replaced and properly fitted before the appliance is
used.
IMPORTANT! :
- The oven must always be under surveillance when in operation.
- During operation the oven surfaces, and in particular the glass,
become hot, and therefore, care must be taken not to touch them,
so as to prevent scalding or burns.
- When opening the door, make sure you stand at a safe distance
from any hot steam that may come out of the baking chamber.
- Never allow unauthorised persons to approach the oven.
NOTE! DO NOT OVERLOAD THE TRAYS AND SET OUT
PRODUCTS SO AS TO GUARANTEE THE BEST POSSIBLE
PASSAGE OF AIR (for example, setting them out like pawns on a
chessboard).
ALWAYS LEAVE A MINIMUM GAP BETWEEN THE
PRODUCTS AND THE TRAY ABOVE .
BEFORE PLACING ITEMS INSIDE THE OVEN, IT IS
ADVISABLE TO SET IT TO A TEMPERATURE ABOVE THE
ENVISAGED SET POINT FOR COOKING (for example, about
30° higher) AND THEN TO LOWER THE TEMPERATURE TO
THE REQUIRED SET POINT FOR COOKING.
FOR MORE EVEN RESULTS, IT IS RECOMMENDED TO
AVOID TEMPERATURES ABOVE THOSE ENVISAGED
FOR THE TYPE OF PRODUCT BEING COOKED.
For tall products or products requiring more air circulation, use
the tray rack with 8 shelves (optional on F60E and F80E)
TO COOK LOW, DELICATE PRODUCTS, OR PRODUCTS
NEEDING
TO
STAY
PERFORATED TRAYS WITH LOW SIDES AND SPECIAL
NON-STICK COATING, MAKING SURE NOT TO BAKE AT
TEMPERATURES ABOVE 220° (for care of these trays, see
chapter 4.2.1).
In case of using the oven when not full, it is advisable to place one tray
on top with an empty tray underneath, and then to alternate the rest,
like these.
STATIC BAKING: FOR SOME TYPES OF PRODUCT, SUCH
AS CHOUX PASTRIES, FOR EXAMPLE, IT COULD BE
USEFUL TO COOK INITIALLY WITHOUT VENTILATION;
TO DO THIS, FIRST PREHEAT THE OVEN TO THE
REQUIRED TEMPERATURE, THEN SWITCH IT OFF AND
INSERT THE PRODUCTS. WAIT FOR THE TIME REQUIRED
AND THEN START THE OVEN SO THAT THE HEATING
ELEMENTS AND VENTILATION START UP FOR THE
SECOND PART OF BAKING. For example, an approximation for
choux pastries, preheat the oven to 250°, switch it off and place the
pastries in the oven, then start it again at a set temperature of 200°
and then complete the baking process.

PUTTING THE BAKING CHAMBER INTO SERVICE
The control panel is located on the front upright of the baking chamber,
as shown in figure 15.

Main switch (ON/OFF)
2.
Adjustment of parameters and searching for memorised programs
3.
Temperature display
4.
LCD display for program settings
5.
Start/Stop button
6.
Program recall button (P)
7.
Manual cooking timer button (Timer).
8.
Steam button (Steam)
Switching on:
When the oven is turned on, the program used most recently will
appear on the LCD display. The LCD display indicates:
- on the first line: The name of the product
DRIER,
USE
THE
SPECIAL
- on the second line (from left to right): the time set for baking,
shown in minutes, the baking temperature in centigrade (°C), the
number of the program.
Pressing gently on the buttons marked with the symbols " " (Up +)
and " " (Down -) displays the programs memorised.
To see the programs stored in the order of memorisation number
(instead of in the order of the product name), press the "P" button once:
in this way, the display will only show the number of the program.
Pressing the " " (Up +) and " " (Down -) buttons will search for the
program number desired. After a few seconds with no search, the
display will again
show the program with name of product.
Memorising a program :
To memorise a new program, it is sufficient to place the cursor on the
first available empty program (except the program no. 1) or an
existing
program, if it is to be edited, using the keys " " (Up +) and " "
(Down -).
Then hold down the "P"button for 3 seconds:"the first letter of the
"product name" will begin to flash. Pressing the buttons " " (Up +)
and " " (Down -) serves to select the alphanumeric character to input
and then confirm with the "P" key, which then passes on to the next
character.
When the complete product name is inserted, hold down the "P" key
for 3 seconds to set the baking time in minutes.
Pressing "P" again sets the baking temperature in °C.
Pressing "P" once again moves on to setting the times (up to 4) for
steaming: the first is expressed in seconds, the following three are
expressed in minutes (from beginning of baking time), while the
steaming time is expressed in seconds. To confirm the setting of each
steaming time, press "P".
If no steaming is desired in the baking program, confirm "0" (zero) at
each of the 4 steaming times.
Once the requested values have been set, the system quit the
programming mode automatically and the program remains displayed,
ready for use. After entering the program name, it is possible to quit
the programming mode at any time (even halfway through), by holding
down the "P"key for 3 seconds.
Execution:
When the "Start/Stop" button is pressed, this starts the oven. One of
two things will happen:
st
1
case
The oven will be at a temperature lower than the required temperature
and this will cause the orange LED
to flash on the button "P" until the cooking temperature stored in the
memory is reached.
The orange LED on the button "P" will switch off when the
temperature is reached and the green LED will switch on, while an
intermittent buzzer will sound </460
to inform the user that it is possible to place the product in the oven for
baking.
Once the food is placed in the oven, press the "Start/Stop" button
again.
The display will now read "ok" and the preset baking time now starts,
at the end of which a continuous buzzer will warn the operator that
the food can be removed from the oven.
nd
2
case
The oven is already at or above the temperature required by the baking
program selected. The green LED on the "P" button is on, showing
that the oven is ready for operation.
Place food in the oven and press the "Start/Stop" button.
The display will now read "ok" and the preset baking time now starts,
at the end of which a continuous buzzer will warn the operator that
the food can be removed from the oven.
The buzzer sounds for 1 minute, but it can be turned off by pressing the
"Start/Stop" button.
Sequential use of programs 100 and 101
Two programs in the memory can be used sequentially (100 and 101).
When program 100 is selected by pressing the "Start/Stop" button, the
following question appears:
PROG100 + PROG101 ?
SI = "P"
By selecting "SI" baking will stop after running programs 100 + 101.

NO = "Start/Stop"
