Press "OK" to confirm the selected item. Press "RETURN" to go
back to the previous screen without confirming the changes.
3.3.7.1
"ADVANCED SETTINGS"
Access MENU, select SERVICE, press OK, select ADVANCED
SETTINGS with the "SELECT" button and access the advanced
settings:
- "Automatic Door": if enabled, it indicates that the door movement
automatically starts/ends baking. Disable this feature to manually
manage the Start/Stop button to start/end baking. The symbol √ on
the right indicates that the function is active.
- "Manual Steam": indicates the amount of steam which is
introduced into the baking chamber if steam is manually
introduced through the "Steam" button (Fig. 10 pos. 5) or in cases
where a different setting is not specified (Fig. 11a pos. E). Select
the required program with the "SELECT" keys and then press "+"
e/o "-" to set the desired value.
- "Delta lower Temperature": is the adjusted temperature applied to
the lower temperature with respect to the higher Temperature

- "Steam unit": it is the unit of measure used for steam injection. It is
expressed in seconds but there may be other units Select the
required program with the "SELECT" keys and then press "+" e/o
"-" to set the desired value.
- "Eco delta below": indicates how many degrees less than the set
temperature the oven will reach in the Eco "stand-by" mode.
Select the required program with the "SELECT" keys and then
press "+" e/o "-" to set the desired value.
- "Open valve": indicates the movement required for the steam valve
to be positioned in the open position in terms of percentage. Select
the required program with the "SELECT" keys and then press "+"
e/o "-" to set the desired value.
- "Beep duration": to change the total duration of the signal. Each
bar corresponds to 10 seconds. It is possible to de-activate the
buzzer by resetting the bars to zero. This timer status is represented
by an icon in the top bar to show that the buzzer is disabled (11a
item L).
- "Sensitivity": a function that makes it possible to adjust oven
sensitivity to changes in temperature, electronically. Settings
available (from least to most sensitive): "Standard" (default factory
setting), "High".
3.3.8
ALARMS DISPLAY/ SIGNALS
The appliance has an advanced self diagnostics system.
The following ALARMS can be displayed if there are any defects:
-Fan alarm stops: the fan motor is provided with a thermal
protection that stops the motor in case of excessive absorption; allow
the motor to cool down before rebooting, after eliminating the cause
of failure. Alternatively, verify that the connections of the electronic
circuit board located in the rear switchboard are correctly performed.
-Max. safety temperature exceeded alarm: if the internal
temperature exceeds the maximum threshold, the safety thermostat
triggers automatically to block the operation of the oven; after
allowing it to cool down and making sure that none of the
components are damaged, unscrew the safety thermostat guard cap
(fig. 2 pos. 4) and press down on the button underneath, which resets
the thermostat; restore the guard cap to its proper position to prevent
the thermostat from deteriorating, as this would prejudice proper
operation of the oven.
-Thermocouple Failure Alarm: this indicates that the thermocouple
is damaged or disconnected. The display also indicates which
thermocouple is damaged.
-Communication Error Alarm: indicates that communication
between the electronic boards is compromised. Ensure that the cards
are powered appropriately and connections are intact.
When one of the above alarms occurs the control unit indicates on
screen which alarm has been triggered, and turns the oven off. A
similar screen to Fig. 23b will be displayed characterized by a
representative icon of the error at the centre of the display (fig. 23b
pos. A) below which there is a text message
The acoustic and visual signal will remain until the "OK" key is
pressed and then the icon in the top bar will remain until the anomaly
is solved. In case of suspended anomaly, it is always possible to view
the type by opening the ALARMS item on the ASSISTANCE menu
(see 3.3.7).

Leave the appliance to cool down and send for technical assistance to
remedy the cause of the failure and to make sure that no part of the
appliance is damaged.
The following may be displayed if there are any failures:

Cart Fault: It marks a fault of the cart or of its
movement/control system.

Steam Valve Malfunction: indicates a malfunction of the
steam valve or its movement/control system.
-
Electric panel over temperature: this indicates that the
temperature of the electric components compartment has
exceeded the threshold limit.
-
Abnormal shut down: displayed at start-up and indicates that
the oven was previously turned off incorrectly, and the
provisions of paragraph 3.4. were not followed.
WARNING!
taken into consideration ONLY in the following cases:
1.
there is a real condition of danger so the oven is switched
off using the main button (fig. 2 part 3).
2.
there is a temporary and sudden interruption of electricity
supply for external causes not caused by the user.
In all other cases follow the procedure to switch off the oven
appropriately, otherwise it will break down permanently!
When there is a signal, the control unit shows the type of signal on
the screen. Press OK (fig. 23b pos. B) to acknowledge the visual and
acoustic signal (if any) and the message disappears. If necessary
complete baking and then contact Customer Care.
3.4
SHUT DOWN
To switch off the appliance, proceed as follows:
- - hold down the STOP key for a few seconds. The display will
show the switching off screen. Wait until the oven cools down.

REGULAR MAINTENANCE

4.1
PRELIMINARY SAFETY OPERATIONS

The operations must only be carried out after the oven has
cooled down.
All maintenance operations must be carried out by qualified staff

All precautions are to keep the appliance in a proper state, and
failure to observe them might result in severe damage that will
not be covered by the guarantee, and in unnecessary risks.
4.2

ROUTINE CLEANING

After carrying out the operations described in point 4.1 above, clean
the appliance as follows:
