Wash food properly and dry them.
Remove any pips and blemishes.

Vegetables
Wash food properly and dry them.
Remove any pips and blemishes.
Vegetables with a long cooking time must be steamed for 5 minutes or boiled in hot water
for 1-2 minutes.
Parboiled vegetables dry with a paper towel.
Cut into slices.
Mushrooms
Clean them thoroughly of the sand without using water.
Bigger pieces cut into slices.
Herbs
Rinse under water and dry with a paper towel.
Dry freshly picked herbs.
Dry one kind of herbs at one time.
Meat
Remove excess fat and membranes from the meat.
Cut into thin slices.
Marinate the meat for about 10 hours, then dry it with a paper towel.
