Swing the lid (F), open and moisten the seal (H) with water ( to enable the lid to slide easily, otherwise you may
tear the seal ) and place it in the recess of the cylinder ( see position H of the assembly drawing ).
Verify that the piston is at the top of its travel and then introduce the mix, taking care to compress the product
without leaving air pockets., which can cause the casing to split.
Close the lid, fit the appropate funnel and secure it with securing nut ( I ). With the casing on the funnel, switch the
machine, then gently hold the tip of the casing at the funnel end with the right hand whilst at the same time,
depressing the knee pad (B). Within short seconds the mix will start to extrude and drag the casing onto it,
producing the sausage. If it is filling too quickly, reduce speed ( unscrew the knob ) by means of pressure
regulator (J), situated in the right lateral part of the machine.
Similarly, screw the knob inwards if the speed is too low.
When the piston has reached the top of its travel, open the lid and pull the knee pad lever towards you and it will
lock in that position, this action brings the piston down ready to be refilled. When the piston is at the bottom of the
cylinder, ensure you move the knee pad to the neutral position, note the sound will momentarily increase and then
revert to normal once in the neutral position. (for EM-30/EM-50 is not necessary to hold the kneepad, because is
locked in this position automatically). Take care to return the kneepad to the neutral position when the piston has
arrived at its lower position. In this point, is appreciaple that the sound level increases slightly and returns to its
normal level when placing the kneepad on neutral position.
CLEANING
To proceed with cleaning the machine, you must unplug it from the
mains, making sure the piston is at the bottom.
Use warm water with a sanitizing agent in compliance to 21 cfr
178,10,10 to clean the cylinder top of the piston, lid, funnels and
securing nut and the outside.
To clean the piston thoroughly it will need to be removed. Raise the
piston to the top and swing the lid open 180º . With extractor key
(K) remove locking bolt (L). This operation is achieved by placing
the spigots of the removal key in the holes on the bolt and giving
the key a short sharp knock ). If the piston turns when doing this,
press the knee pad down whilst at the same time knocking the
extractor key. Remove the locking bolt and insert the instractor bolt
(M). ( See sketch piston removal ) and screw it down which will lift
the piston. In case it does not, press the knee pad down again.
To refit, proceed in reverse. When the bolt is tight, press the knee
pad to ensure the piston ram is at the top and again tighten firmly,
but without excess pressure.
