4.3 GENERAL DESCRIPTION
The slicer was designed and built in conform-
ity to directive 2006/42/CE - 2006/95/CE
- 2004/108/CE and European regulation EN
1974:1998 +A1.
The machine provides the user with:
- maximum safety in use, during cleaning and
ordinary maintenance operations;
- maximum hygiene obtained by using stainless
materials or materials which are in any case
protected against oxidation together with
careful design of all the components which
may come into contact with food;
- maximum cutting precision and capacity to-
gether with a sturdy and reliable structure;
- the possibility of working continuously.
The machine is essentially made up of a base-
plate which supports a circular blade mounted in
a vertical or inclined position, driven by an elec-
tric motor which is intended to slice food products
and a carriage which slides on guides located
underneath said baseplate which in turn supports
a meat table parallel to the blade edge.
The meat table also has an appropriate
self-locking device to keep the product still in
the desired position during cutting operations
(product holder).
The thickness of the slice is adjustable thanks to
a thickness gauge plate located in front of the
blade. This plate, where the product to be cut is
placed, can be moved transversely with respect
to the blade, by a value corresponding to the
thickness of the desired slice.
All components of the machine are made in light
aluminium and magnesium alloy, polished and
anodically oxidized, in stainless steel and in plas-
tic material for food use in observance of the
prevailing hygienic sanitary regulations in order
to obtain a product with a sturdy structure, reli-
able, easy to clean and unchanging over time.
The cutting blade is driven by a self-ventilated
motor located under the baseplate. Transmission
drive is obtained with a longitudinally grooved
belt which guarantees low noise.
Start and stop are carried out with two buttons
located in front of the operator which can be eas-

ily identified by position and colour. Operation of
the machine is indicated by an indicator light.
This control system prevents accidental starting
of the machine after possible interruption of the
electrical power circuit. This means that the slicer
can be restarted only intentionally. The machine
has a sharpener built for maximum simplicity of
use and safety.
Meat table, sharpener and blade cover can be
removed for cleaning.
4.3.1 Safety
The following mechanical safety devices are
adopted:
- safety ring around the irremovable blade
(blade guard);
- meat table removable only with the thickness
plate adjustment knob in safety position and
with the carriage positioned at the end of the
operator side travel limit. Once the complete
meat table arm is removed the thickness plate
remains locked in the aforementioned posi-
tion;
- series of aluminium and transparent plastic
guards on the meat table;
The following electrical safety devices are
adopted:
- starting with start and stop buttons with a low
voltage control circuit which also requires vol-
untary restart of the machine in the event of
electrical mains power failure;
- safety microswitch, if present, on the low volt-
age auxiliary control circuit which excludes
any possibility of activating the electric motor
with the blade cover removed.
4.3.2.
Residual risks
WARNING: The safety ring around the blade is
made in conformity to European regulation EN
1974:1998 +A1 but, in the sharpening area,
the aforementioned protection does not entirely
eliminate the risk of cutting.
During blade cleaning and sharpening operations
be very careful not to be distracted.
Use of protective gloves is recommended.
