NOTE:
The electronic controls allow more precise and rapid
regulation of the oven. However, they are by nature more delicate
than traditional ones.
To ensure that they remain in a proper state of operation it is
recommended that the buttons on the electronic control panel be
activated by pressing lightly with one finger, avoiding excessive
pressure or impact.
The oven allows to set the baking temperature, the preheat temperature,
the baking time and the amount of steam to be injected in the baking
chamber. For more information on the "Preheating" function see
paragraph 3.2.2.3.
In this mode, it is possible to use the oven in "MANUAL" mode or to
use the "PROGRAMS" by recalling one of the baking programs stored in
memory.
•
SWITCHING ON WITH MANUAL PARAMETER SETTING
When turned on the main screen shows the baking parameters in red
(Fig. 24a). Press the "+" and/or "-" buttons to increase and/or decrease
the parameter. Then adjust the temperature, the desired cooking time and
possibly the amount of steam to be injected into the baking chamber.
Once the required value has been set it is not necessary to confirm, as the
parameter is received and implemented in real time.
The baking chamber temperature adjustment is set for a maximum
temperature of 270°C (518°F). If, due to an anomaly, this threshold is
exceeded, the safety thermostat intervenes to block oven operation by
switching it off. The screen will display the alarm situation that occurred
(fig. 28).
The alarm signal (visual and acoustic) will continue until the "OK"
button is pressed. Wait until the oven cools down. Unscrew the cap from
the safety thermostat (fig.20 part.3) and press down.
The button will reset the thermostat and after the "Start/Stop" button is
pressed, the oven will restart normally.
Refit the protective cap on the safety thermostat to prevent this
instrument from becoming damaged and affecting the operation of the
oven.
WARNING!
If this operation is carried out without waiting
for the oven to cool down, the manual safety thermostat will not
allow the oven to be reset.
When an anomaly occurs, it is necessary to request the intervention
of the technical Assistance Service.
The cooking time can be set from 1 minute to 10 hours. By pressing the
"-" key consecutively, the "Time" parameter is deleted and the timer icon
is shown on the corresponding "+" button (Fig. 24d pos. U) indicating
that the "Manual" mode is enabled (see point 3.2.2.2). Press the button
with this icon to reactivate the "Standard" mode by selecting the desired
cooking time.
The oven can be set from 0 to 30°C (54°F) to check if it reaches the
desired temperature with respect to default temperature before starting to
bake. To change the parameter enter MENU, select PREHEATING,
press OK, select the desired value and press "OK" to confirm. The main
screen will be updated with the new preheat mode setting. For more
information on the "Preheating" function see paragraph 3.2.2.3.
NOTE:
If the mode setting is not displayed on the main screen,
it indicates that preheating is inactive i.e. set to 0.
Steam can be expressed in seconds "s", millilitres "ml" or percentage
"%" depending on user choice (see point 3.3.7.1). You can tune the time
to be between 1 and 10 sec by default. By pressing the "-" key
consecutively, the "Steam" parameter is deleted and the steam icon is
shown on the corresponding "+" button (Fig. 24d pos. V) indicating that
if the method of insufflation is used, the amount of steam provided by
default and set in the "Advanced" settings mode will be provided (see
point 3.3.7.1). Press this key (Fig. 24d pos. V) to select a quantity of
steam not provided by default if necessary.
NOTE:
If the information on the steam quantity is not displayed
on the main screen, it does NOT indicate that the feature is disabled
but that the default steam quantity to be configured in the
"Advanced" settings will be provided as described in 3.3.7.1.
To turn the heating elements on and thus start heating up, simply press
the "Start/Stop" button as suggested in the status bar with the words
"PRESS START". When switched on, the baking chamber lighting will
also switch on automatically. "Lightning bolts" switch on in real time to
show that the heating elements are on (fig. 24a pos. F) located to the
right of the set temperature and the actual temperature values. This
graphic display also provides information on the power level employed
by the heating elements at any time, shown by how much of the "bolt"
itself is lit up. During the initial stage following the heating element
switch on, the status bar will read "HEATING". Other parameters will be
displayed such as the estimated time required for the oven to reach the
required temperature ("READY IN xx min") and the icon status display
(icon "M" for example indicates manual mode is enabled) (fig. 24b pos.
N).
NOTE:
The estimated time required for the oven to reach the
required temperature is indicative and will vary significantly
according to the parameters set during the switching on stage.
During this stage, the display will also alternate the real temperature with
the set one.
At this stage you can always edit the baking parameters set by pressing
the "+" and/or "-" button to increase and/or decrease the parameters. To
set the "Temperature" parameter, the display will also alternate the real
temperature with the set one; if you press "+" and/or "-" , the current
setting is shown in red ("Set Temperature") then the subsequent
pressures change the parameter.
If the temperature reached is higher than desired, reduce the temperature
set and the status bar will show the message "PREPARING" instead of
"HEATING"; open the door to allow the oven to cool down if necessary.
NOTE:
Messages in "HEATING" and in "PREPARATION"
mode do not restrict starting to bake which is in any case always
possible by pressing the "Start/Stop" button, they just represent
user utility functions.
To stop the heating/preparation stage, press the Start/Stop button for at
least 5 seconds to turn the heating elements off and STOP the oven.
•
START IN PROGRAM MODE
Using the oven in Program mode enables the operator to work
"automatically", i.e. to save and/or call up from the memory (internal or
external) a series of baking programs with pre-set parameters. Each
baking program can store the preheating mode up to 9 steps, each
characterised by: 1 temperature, 1 time, possibility to inject the desired
amount of steam , to establish the steam exhaust valve position and to
enable the "Power Booster" function.
Select the required program with the "P" button to edit the list of
programs, then use the arrow keys to select the required program and
press "OK", the summary of the chosen program will be displayed. Press
"OK" to confirm the selection or "RETURN" to return to the list of
programs.
The main screen will change as in Fig. 24c and will display the name of
the program in the status bar alternately with the "PRESS START"
message and the status icons. Furthermore if the program displays an
image by default, it will be shown below the baking time. If there are
further baking steps the baking time represents the total time of the
program. The total number of steps included in the selected program
represented by x/X is displayed to the left.
To turn the heating elements on and start heating up, press the
"Start/Stop" button.

BAKING STAGE
When the oven reach the set-point temperature (unless a "delta T" is set)
and the pre-heating mode is adjusted, a buzzer will sound before starting
to bake. From now on until baking starts, the status bar will display
OVEN READY and the oven will retain the preheat temperature set. The
display will show the set point temperature and turn white.
Open the door and load the oven. After loading the oven, once the door is
closed the baking timer will be enabled automatically in MANUAL and
PROGRAMS mode (see "AUTOMATIC DOOR" function in 3.3.7.1).
During the baking process, the time display will countdown the
remaining time and a red line below gradually disappears while the status
icon in the status bar remains constant during the baking process.
During the baking process, it is possible to edit the settings in real time,
by pressing the "+" and "-" buttons to adjust the temperature and to
increase/decrease the time. You can edit the amount of steam during the
baking process only in manual mode.
