- remove the control panel fixing screws and plugs (part. 17 plate A)
- disconnect the power cables from the control panel
- remove the knob and the main switch (part. 15, 18, plate A)
- replace the control panel, complete with pyrometer (part. 17 plate
A)
- to reassemble, perform the above operations in reverse order.
5.3.11
REPLACING THE SAFETY THERMOSTAT
WARNING! Regularly check that the safety thermostat is
operating correctly.
After carrying out the operations described under 5.1 above, to
replace the safety thermostat proceed as follows:
- unscrew the hood and nut fastening the thermostat (item 38, tab.
A);
- remove the back panel by loosening the fastening screws;
- remove the thermostat sensor, located inside the rock wool
insulation, unscrewing the casing and using a blade to remove the
rock wool section concerned;
- slide out the thermostat and disconnect the fastons;
- replace the thermostat with the relevant sensor and the worn part
of rock wool, if necessary;
- follow the above steps in reverse order to refit the parts.
5.4
REPLACING PARTS IN THE PROVING OVEN WITH
HUMIDIFIER
5.4.1 REPLACING THE TANK HEATING ELEMENT
After carrying out the operations described under 5.1 above, to
replace the tank heating element proceed as follows:
- unfasten the fixing screws
- disconnect the power cable feeding the heating element (part. 19,
plate B)
- remove the heating element (part. 19 plate B)
- to reassemble, perform the above operations in reverse order.
5.4.2 REPLACING THE LIGHT BULB
After carrying out the operations described under 5.1 above, the
light bulb and/or its cover must be replaced from inside the
proving oven, proceeding as follows:
- unfasten the cover and replace the bulb or the cover itself (part. 8,
16, plate B)
- replace the cover.
5.4.3 REPLACING THE KNOB
After carrying out the operations described under 5.1 above, to
replace the knob proceed as follows:
- open the door of the proving oven and remove the plug
- unscrew the fixing nut inside the knob
- replace the knob, then tighten the fixing nut (part. 2, plate B).
5.4.4 REPLACING
THE
WASHER
After carrying out the operations described under 5.1 above, the
thermostat dial and/or relative washer must be replaced from
inside the proving oven, proceeding as follows:
- remove the snap-fitting thermostat dial (part. 5, plate B)
- unscrew the fixing washer (part. 16, plate B)
- replace the washer and/or the dial.
5.4.5 REPLACING THE MAGNETIC FASTENER
After carrying out the operations described under 5.1 above, to
replace the magnetic fastener proceed as follows:
- open the doors of the proving oven
- remove the snap ring
- replace the magnetic fastener
5.4.6 REPLACING THE THERMOSTAT
After carrying out the operations described under 5.1 above, to
replace the thermostat proceed as follows:
- remove the screws fixing the panel
- disconnect the thermostat faston connectors (part. 7, plate B)
- remove the thermostat dial and the washer (part. 5, 6, plate B)
- remove the thermostat sensor located inside the oven (part. 7, plate
B)
- replace the thermostat and relative sensor
- to reassemble, perform the above operations in reverse order.

5.4.7 REPLACING THE YELLOW INDICATOR LIGHT AND
THE LIGHT SWITCH
After carrying out the operations described under 5.1 above, to
replace the yellow indicator light and the light switch proceed as
follows:
- remove the screws fixing the panel
- disconnect both the yellow indicator and the light switch faston
connectors (part. 3, 4, plate B)
- replace the yellow indicator light (part. 3, plate B)
- replace the light switch (part. 4, plate B)
- to reassemble, perform the above operations in reverse order.
5.4.8 REPLACING THE HEATING ELEMENTS
After carrying out the operations described under 5.1 above, to
replace the heating element proceed as follows:
- unfasten the fixing screws
- disconnect the power cable feeding the heating elements (part. 10,
plate B)
- remove the heating elements
- to reassemble, perform the above operations in reverse order.
