TECHNICAL DATA

1.1
DESCRIPTION OF THE APPLIANCE
The oven is fitted with a baking chamber heated by means of two
heating elements, and is fitted with a removable, rotating tray holder
carriage.
The baking chamber is made of steel plate, with a
programmable electronic type temperature regulation system. It is
fitted with a temperature safety thermostat, a device to spray water
and produce steam with a timer, a suction fan that can remove fumes
both from the baking chamber and from the hood, and a glazed door
with locking handle. Cooking is extremely even thanks to the
adjustable deflectors controlling the hot air ventilation cycles and
flow, combined with rotation of the carriage.

DIRECTIVES APPLIED
This appliance complies with the following directives:
- Low Voltage Directive 2006/95/CEE.
- Electromagnetic Compatibility Directive 2004/108/CEE.

WORKPLACES
The oven is programmed by the operator using the control panels at
the front, and it must be attended to while in operation.
The door giving access to the oven is located at the front.

IDENTIFICATION
When communicating with the manufacturer or service centre,
always give the oven SERIAL NUMBER, which is affixed to the
bottom right hand part of the appliance as indicated (See Fig. 2).

LABELLING
The oven is provided with warning labels at the points indicated in
fig. 3.
WARNING! On the equipment surface there is a burn risk due to high
temperature elements. For any intervention or action wait for the
appliance to cool to room temperature and always use suitable
protective equipment (gloves, glasses...).
WARNING! Presence of dangerous tension. Before performing any
maintenance operation, disconnect the power supply by turning off
the switches fitted on the outside of the oven and/or the leavening
compartment and wait for the appliance to cool to room temperature.

WARNING! To avoid scalding, do not use loaded
liquids or cooking goods which becomes fluid by heating in higher
levels than those which can be easily observed.

1.10 NOISE
This appliance is a technical instrument of work and normally, the
noise level threshold at the operator station does not exceed 74 dB
(A).

NOTE: the manufacturer declines all responsibility in the event
of failure to comply with safety regulations.
2.1
The oven is generally delivered wrapped in a transparent synthetic
film and mounted on wooden pallets, using road transport vehicles
(See Fig. 4).
2.2
NOTE: on receiving the oven, it is advisable to check its
conditions and quality.
Raise the equipment using only and exclusively the points indicated
at the pict. 5, after removing the lids as shown.
After unloading and replacing the 4 fastening elements, it is easy to
position the appliance because it is fitted with rollers underneath.
Position the oven in a suitably hygienic, clean, dry and dust-free area,
making sure that it is stable. Packing materials must be disposed of in
accordance with current regulations.
2.3
To ensure that the oven operates properly, it is advisable to comply
with the following limits:
Working temperature: + °5C ÷ + °40C
Relative humidity: 15 % ÷ 95 %
2.4
WARNING! When positioning, assembling and installing the
oven, the following specifications have to be complied with:
- Laws and standards in force regarding the installation of
electrical appliances.
- Directives and indications issued by the electricity supply
network.
- Local building and fire-prevention laws.
- Accident prevention regulations.
- Regulations in force of the electromechanical rules.
Remove the protective film from the outside of the oven, pulling it
gently to remove all the adhesive. Should any adhesive remain on the
oven, remove using kerosene or benzene.
The oven must be positioned in a well ventilated area, at a minimum
distance of 10 cm from the left hand side wall, 20 cm from the back
wall and 50 cm from the right hand side wall (fig.6)
WARNING! After positioning the appliance in the location
foreseen, fix the appliance to the floor using at least 2 brackets of
sufficient strength (Fig. 2 item 1), so as to prevent it from moving
for any reason; it must be possible to remove the brackets in
order to carry out special cleaning operations. To fix the
brackets, which are not supplied by the manufacturer, use
normal commercial pressure clamps suitable for the type of
flooring, and self-tapping screws, which must be screwed into the
back of the oven base only.
Take into account that for certain cleaning/maintenance
operations, the distance needs to be greater than stated here and
therefore, consider the possibility to be able to move the oven for
the purpose of carrying out these operations.
2.5
2.5.1 VAPOUR EXHAUST CONNECTION
WARNING! The vapour exhaust connection must only be
carried out by qualified personnel.
The housing for the exhaust vapour suction device is on the top part
of the appliance (see Fig. 7 item B).
Fit the suction device (Fig. 7 item C) (which for shipping purposes is
located inside the baking chamber) using the bolts provided with it,

diagram (See Tab. B).
