TURKISH MOCHA
for 2 cups
INGREDIENTS
2 tsp mocha beans, 2 tsp sugar, approx. 100 ml water,
1 pinch of cardamom
PREPARATION
Grind the mocha beans very finely and combine
with sugar, a pinch of cardamom and water in a
small pot (traditionally in a long-handled mocha
pot – called cezve). Bring to a boil over medium
heat while stirring until the coffee begins to foam
and rise. Remove from the stove, distribute the
foam with a spoon into 2 cups and return the pot
to the stove. Bring to a boil again while stirring
until the coffee foams up again, remove from the
stove and wait until the coffee settles. Bring to a
boil once more, then pour the coffee into the cups.
Serve with a glass of still water.
FRENCH PRESS
for 6 cups
INGREDIENTS
45 g coffee beans, 750 ml water (approx. 95 °C)
PREPARATION
Grind the coffee beans medium to coarse, fill in
the jug of a French press and pour in the water
continuously. Stir with a long spoon so that the
coffee grounds are distributed evenly. Put the
cover and press the plunger down slightly until the
sieve is located slightly below the surface.
