6.1. MAINTENANCE TECHNICIAN REQUIREMENTS
The term "maintenance" not only means the periodical control of the normal machine functioning, but also the remedies of all
those causes putting the machine out of service. The personnel must have read and understood the present booklet and know the
prescriptions of the residual dangers.
It is important that the activities of maintenance, replacement of the parts, adjustment of the gears and troubleshooting are entru-
sted to skilled competent personnel authorised by the employer. The personnel carrying out the operations described in the present
chapter must not only present the above mentioned characteristics, but they must also have read and understood the safety prescrip-
tions indicated in the same chapter. For the disposal of the worn and replaced materials, refer to the prescriptions of the Chapter 7.
The maintenance technician has the task to:
• carry out the adjustments of the machine, calibrations of the internal gears also within the dangerous zones with the fixed guards
closed and locked in position, with the disconnected movable dangerous elements stopped in safety;
• carry out the cleaning of the internal parts of the machine, the maintenance, the assistance interventions, troubleshooting and
replacement of the worn or deteriorated parts.
All the operations of maintenance, cleaning and replacement of the parts must be carried out exclusively after:
• having unloaded the electric equipment with the food product in operation;
• having insulated it from the power supply and external energy source;
• having waited for the cooling times to allow reaching the environment temperature of the electric equipment.
6.2. MAINTENANCE REQUIREMENTS

• Before any maintenance, cleaning and part replacement intervention, pay attention to the labels placed on the
machine. During the activities of maintenance, cleaning and replacement of the parts, you must not tamper or
disconnect labels of warning or safety devices, for any reason.
• The possible replacement must be carried out with original products of the manufacturer or at least of equivalent
quality, safety and characteristics. For further details, contact the Authorized Assistance Centre.
ELECTRIC OVEN
MAINTENANCE
For some interventions it is necessary to remove some fixed guards from their po-
sition. The removal can be carried out only by qualified maintenance technician; At
the end of the interventions, the guards must be restored in their initial position and
locked with the fixing systems that were foreseen.
The person responsible for the maintenance must deactivate completely the machine
from external electric energy sources, before removing the fixed guards:
• position on (O - OFF) the protection device placed upstream of the feeding line
of the electric equipment (Fig. 6.2.1.);
• disconnect the general cut-off device and arrange to protect the plug with sui-
table systems (Fig. 6.2.2.).
