4.1 Water Connections (Water cooled machines)
Depending on local water conditions, it may be advisable to
install a water strainer to prevent foreign substances from clog-
ging the automatic water
Connect the machine to the drinking water mains with a dedicated line, fitted

upstream of a shut-off cock placed in a position easily reachable by the
operator.
Check that the mains supply of the cold water line has pressure values
between 1 and 3 BAR (between 0.1 and 0.3 MPa) and temperature between
13 °C and 25 °C (55 °F - 77 °F).
Connect the machine to the water supply using only the new pipes supplied,
in compliance with the IEC 61770 standard; never use obsolete or worn out
pipes again. Use suitable DIN 3017 screw clamps.
To connect the machine to the cold water supply, remove the lower front pa-
nel by acting on the two screws located on the lower side of the panel; locate
the water drainage fitting (Ø 3/4") and connect it to the pipe (fig.II/05).
Provide a non-return water device on the water supply line, in compliance
with the regulations in force in the country where the machine is installed.
To connect the condensation water drain to the water supply, locate the
water drain fitting (Ø 3/4") and connect it to a pipe (fig.II/05).
Take the piping out of the machine through the holes on the bottom, taking
care to make bends with the widest possible radius without damaging the
components present, especially the electrical components and the pipes of
the refrigeration system containing flammable gas R290.
The water drain hose must have a minimum slope of 3 cm for each meter of
length.
Replace the lower front panel.
Do Not install a hand shutoff valve on the water-out line.
After having connected the water inlet and outlet pipes, with the machine stopped,
open the cut-off cock and make sure that water does not leak from the drain.
Never shut the water cut-off cock while the machine is running.
4.2 Electrical connections
Each machine must be connected to a power line dedicated to sanitary
power, a standard and in perfect working order.
Check the exact correspondence between the voltage and power of the
mains compared to the values carried on the data plate applied on the side
of the panel.
Connect the machine to the electrical power supply system.
Install a omnipolar master switch upstream the appliance with
minimum contact opening of 3 mm of adequate power, with a fuse and
circuit breaker protective system / automatic differential circuit brea-
ker. Use an approved interlocking plug to allow only the
The cable must be well laid, without being rolled-up or overlapped. It must
not be exposed to blows or tampering. It must not be in the vicinity of liquids
or water and heat sources. It must not be damaged in any way. If so, before
connecting the machine to the mains, have it replaced by qualified person-
nel with another having suitable section and type H07RN-F.
For safety purposes, make sure the earthing system to which
the machine plug is connected is compliant with standards and
perfectly efficient. Failure to comply may result in electrocution.
Do not use, for connecting the machine: extensions, multiple
sockets, adapters, etc.
The three-phase machines are powered with three-phase + neu-
tral line: pay maximum attention to never connecting the phase
lines with the neutral. The manufacturer declines all responsibility for
damage to the machine resulting from this failure.

If needed, carry out an equipotential bonding, using the screw
placed on the rear of the machine below the frame and marked
with the symbol shown in figure (fig.II/06).
4.3 Refrigerant
This machine contains flammable refrigerant gas.
Handle with care and scrupulously and follow the safety instruc-
tions given in this manual.
Refrigerant circuit content:
- Gas: R290 (Propane)
- Category: A3 (flammable)
- Quantity: <150 gr.
in hermetically sealed circuit.
The gas quantity, Global Warming Potential (GWP), and CO
lent information is recorded on the unit's data-label, indicated in chap. I-4 of
this manual.
Refrigerant liquid sprayed onto the skin may cause serious dama-
ge to tissue. Keep eyes and skin protected.
If refrigerant burns should occur, flush the area immediately with
cold water. If burns are severe, apply ice packs and contact a physician
immediately.
This machine contains fluorinated greenhouse gases (F-Gas) to provide
refrigeration using a hermetically sealed circuit or within foam insulation.
This machine's type of gas, quantity, Global Warming Potential (GWP), and
CO
tonnes equivalent information is recorded on the unit's data-label.

The refrigerant used is generally considered non-toxic and non-flammable.
However any gas under pressure is potentially hazardous and must be han-
dled with caution.

OPERATING CHECKS
These operations are reserved exclusively
for authorised from the manifacturer and
qualified personnel.
5.1 Beater motor rotation direction (only
three-phase machines)
The following checks must be carried out
during the first commissioning and whene-
ver the plug is connected to a new socket.
Power the machine, press the AGITATION/
P key and control that the beater rotates
anticlockwise. If this is not the case, ex-
change the phases in the plug. To connect
the phases properly cut the power and in-
vert the two phase wires in the plug
(fig.II/07).
Use of the machine with incorrect
beater motor rotation seriously
damages general performance and causes early wear of
the scrapers.
5.2 Condensation pressure.
The following verification must be carried
out during the first commissioning and whe-
never the loading and unloading pipes are
connected to a different water line.
With the machine in production mode, after
a few seconds condensation water must
come out of the drain pipe at a temperature
of about 35 °C - 39 °C (95 °F - 102 °F).
If this is not the case, the pressure switch
valve shown in the figure must be adjusted
(fig.II/08).
