3.5 Activation of anti-fog system (optional)
In particular conditions of temperature and
humidity, with the machine running, forma-
tion of fogging can occur on the surface of
the covers.
Activating the anti-fog system eliminates the
problem (fig.III/15)
4 OPERATIONAL ROUTINES

4.1 Daily Closing
This procedure must be performed once daily, before the night
closing.
Wash your hands well and/or wear disposable gloves.
Remove the lift, the insulating ring rubber with its gasket, the scoop and
proceed with their cleaning and sanitizing.
Carefully clean the upper surface of the machine (top) with disposable paper
previously soaked in detergent / sanitizing liquid, taking care to avoid any
contact of the sanitizer with the food product contained inside the jars. Also
clean the pallet holder brackets and the hinges of the covers.
Be sure to carry out the operations described in a sufficiently
short time to prevent the temperature of the product contained
in the tub from exceeding the 4 °C threshold (39 °F)
Carefully reassemble the parts previously disassembled and sanitized.
Press the NIGHT PRESER-
VATION "CN" key (fig.III/16)
to switch the machine from
the production mode to the
stand-by mode. In this mode
the product in the tubs is
kept at a temperature close
to 0°C (32°F).
Enabling the overnight preservation you switch simultaneously all cylinders with
freezing / maintaining ongoing cycle. If a cylinder is off (display OFF), switching
the machine on stand-by it it will not be affected by the overnight preservation
and remain offs.
Check that the display is showing code "C_N" to confirm the switch.
Never close the water interception tap otherwise the machine
will not be able to keep the product contained in the tubs at the
correct temperature. Make sure the machine is properly po-
wered.

4.2 Daily Opening
The following procedure must be performed at the beginning of
each work session, at the end of a long administration break
with the machine in NIGHT PRESERVATION "CN" mode.
Check that there are no alarms shown on the display.
Check that the displays do not show the message "PWR", indicating that
during the conservation phase there has been an interruption of power sup-
ply (black out): in this case the product could be contaminated and no longer
suitable for administration. In this case, the product must be eliminated and
the machine cleaned and sanitized.
Check that the mixture conservation status in the tub is correct. In case of
signs of separation, it is advisable to start the machine in agitation for a few

Check that the machine has remained clean, not contaminated by dust,
impurities or insects.
Press NIGHT PRESERVATION - CN key and check that all displays no
longer show the message "CN".
Wait for the batch time and check that the consistency of the product is
correct.
