quantity of oil, generally about ½ litre, to be left in the filtration
tank.
• Disconnect the pipe with handle from the hose.
• Disconnect the hose from the fryer, close it and store it on its
support (6) on the door.
• Remove the filtration tank from its position. Clean the tank
and the 2 filters.

14 PROLONGED DISUSE

Before any prolonged disuse of the appliance, proceed as fol-
lows:
• Clean the appliance thoroughly.
• Rub stainless steel surfaces with a cloth soaked in Vaseline
oil to create a protective film.
• Leave lids open.
• Close the valves and turn off the electrical power supply at
the main switch.
Following prolonged disuse, proceed as follows:
• Inspect the appliance thoroughly before using it again.
• Allow electric appliances to operate at the lowest temperatu-
re for at least 60 minutes.

REMINDERS FOR CLEANING

The manufacturer will not be liable for any damage or in-
jury resulting from failure to observe the following rules.
• Disconnect the appliance electrical power supply, if present,
before proceeding with any operation.
• Clean the external satin stainless steel surfaces, the inside of
the cooking tanks and the cooking plates daily.
• The internal appliance components must be cleaned by a
specialist technician at least twice a year.
• Do not clean the appliance with high pressure water jets or
steam cleaners
• Do not use corrosive products when cleaning the floor or the
base underneath the appliance.
• Do not use flammable products to clean the appliance.
SATIN FINISH STAINLESS STEEL SURFACES
• Clean the surfaces with a cloth or sponge using water and
proprietary non-abrasive detergents. Follow the grain of the
satin finish. Rinse repeatedly and dry thoroughly.
• Do not use pan scourers or other iron items.
• Do not use chemical products containing chlorine.
• Do not use sharp objects which might scratch and damage
the surfaces.
COOKING TANK (fig. D)
Clean with water and suitable detergent every time that the oil
is changed.
Do not use chlorine, or sulphate or sulphide based detergents.
Do not turn the heating on as if there was oil in the tank. WAR-
NING: danger of boiling with risk of steam burns.
Do not empty the tank cleaning water into the filtration tray.
• Close the drain valve by pushing its handle to the end (1).
• Fill with clean water to the maximum level, indicated by the
top mark at the back of the tank.
• Add detergent following the product instructions.
• Switch on the control panel (instructions in "SWITCHING ON
THE CONTROL PANEL").
• Touch "TANK CLEANING" and follow the instructions on the
display.
Touch "START" to turn the heating on. The water will be hea-
ted to 95 °C and then kept at this temperature for the set time.
Heating turns off automatically after 10 minutes. The remaining
time is displayed on the top right.
To turn the heating off at any time touch "STOP".
To stop the cleaning process and return to the main screen
touch "X".
• Empty the content of the tank to an external container (in-
structions in "Emptying the tank to an external container").
• Repeat the procedure from the start. This time add 0.25 l of
vinegar to the water, to remove any alkaline residues left by
the detergent.
• Thoroughly rinse the tank with clean hot water to remove all
traces of detergent.
• Dry the tank and the heating element (electric models) with
a clean cloth.
FILTRATION TANK (fig. A)
Clean with water and suitable detergent every time that the oil
is changed.
Do not use chlorine, or sulphate or sulphide based detergents.
• Remove the filtration tank (7) from its position.
• Remove the filters.
• Remove any food residues.
• Wash with water and suitable detergent.
• Rinse with plenty of hot water, and dry.
• Replace. Follow the removal procedure in the reverse order.
METAL AND FABRIC FILTERS (fig. A)
Cleaning may be required several times a day, using hot water
and a suitable detergent.
Only when the filtration tank is empty.
Do not use chlorine, or sulphate or sulphide based detergents.
• Partially remove the filtration tank (7) from its position.
• Remove the filters (8, 9 and 10).
• Remove any food residues.
• Wash with water and suitable detergent.
• Rinse with plenty of hot water, and dry.
• Replace. Follow the removal procedure in the reverse order.
TRAY SUCTION PIPE (fig. A and G)
Clean daily.
• Disconnect the tray suction pipe (2) from its fitting (A).
• Insert component "11" on the tray suction pipe port.
• Connect the assembly to the fitting (B) and press.
• Switch on the control panel (instructions in "SWITCHING ON
THE CONTROL PANEL").
• Touch "FILTRATION / TANK FILLING / EMPTYING", and
then EMPTYING...".
• Touch "START" to switch the pump on". Any debris inside the
pipe will come out.
• To stop the pump touch "STOP".
• Remove the assembly (do not remove component "11" from
the port).
• Clean the inside of the pipe with hot water and suitable de-
tergent.
• Rinse with plenty of hot water, and dry.
• Remove component "11" and place it back on its support.
• Reconnect the tray suction pipe to its fitting (A).
