Thank you for purchasing this HENDI appliance. Read this
user manual carefully, paying particular attention to the
safety regulations outlined below, before installing and using
this appliance for the first time.
Safety instructions
• Only use the appliance for the intended purpose it was de-
signed for, as described in this manual.
• The manufacturer is not liable for any damage caused by
in correct operation and improper use.
• The appliance can be used only as intended.
• Never open the appliance enclosure on your own.
• Do not insert any objects into the appliance enclosure.
• If the appliance falls down or is damaged in another way, al-
ways have the appliance checked and, if necessary, repaired
by a specialize repair shop before continued use.
• Never repair the appliance on your own. This may result in a
threat to human life.
• Keep monitoring the appliance during operation.
• Children are unaware of hazards created operating equip-
ment. Never allow children to handle equipment.
• Use only the accessories supplied with the appliance.
• Avoid overloading.
• The appliance must not be used by persons (including chil-
dren) of impaired physical, sensory or mental abilities, or
those who lack appropriate knowledge and experience.
• Never store or leave the stuffer at a temperature lower than
32°F (0ºC).
Intended use
• This appliance is intended to be used for commercial ap-
plications, for example in kitchens of restaurants, canteens,
hospital and in commercial enterprises such as bakeries,
butcheries, etc., but not for continuous mass production of
food.
• This appliance is designed for making sausages. Any other
use may lead to damage of the appliance or personal injury.
• Operating the appliance for any other purpose shall be
deemed a misuse of the device. The user shall be solely lia-
ble for improper use of the device.
• The device, equipped with horizontal and vertical racks, has
a new gearing system. It has a two-speed gear reduction
drive which releases the plunger for quick and easy filling.
The machine is ideal for sausage makers or restaurants
aiming at making delicious sausage stuffings.

Remark: The content of this manual applies for all listed items
unless specified otherwise. The appearance may vary from the
shown illustrations.
Preparation before use
• Remove all protective packaging and wrapping.
• Check that the device is in good condition and with all ac-
cessories. In case of incomplete or damaged delivery, please
contact the supplier immediately. In this case, do not use
the device.
• Clean the accessories and the appliance before use (See ==>
Cleaning & Maintenance).
• Make sure the appliance is completely dry.
• Place the appliance on a horizontal, stable and heat resist-
ant surface that is safe against water splashes.
• Keep the packaging if you intend to store your appliance in
the future.
• Keep the user manual for future reference.
Operating instructions
Operate the device following the steps below:
• Fit the crank handle on the on fast speed gear system (Fig.2
on page 4) and rotate it clockwise to lift the plunger.

• Remove the cylinder for cleaning (Fig.3 on page 4). Remove
the plunger for cleaning (See--->Plunger Assembly/Disas-
sembly).

• Clean the appliance (See ---> Cleaning)
• Having completed the cleaning, install the plunger and cyl-
inder in its initial position separately. Make sure it is properly
locked in place.
• Fit the funnels on the sausage outlet and screw it tight with
a locking nut (Fig.4 on page 4).

• Apply a food grease lubricant(not included) to the inner sur-
face of the Canister before filling the meat mixture (Fig.5 on
page 4).
• Filling the properly installed cylinder with meat and put sau-
sage casing on the funnels.
• Last step: Switch the crank handle to low speed and turn it
clockwise to lower the plunger. The meat will start to come
out of the nozzle and into the casing. Form a sausage.
• After the stuffing is finished, remove as much residue as
possible with hot water. You can also clean the appliance
with a brush/cloth and suitable detergent approved for use
with meat processing equipment.
Note: This will dissolve and remove any grease, oils and pro-
tein that bacteria may feed on. Rinse again with warm clean
water to remove the detergent solution, oils, grease and pro-
teins. The product may be dried using compressed air. Before
reassembling make sure that all parts are dry.

• WHILE ASSEMBLING THE MACHINE, DO NOT POSITION
THE CYLINDER UPSIDE DOWN.
