cooking chamber is steadily maintained lower than during conventional
cooking but with longer times thus increasing the tenderness of the
final product and decreasing the loss of weight of the food at the same

We recommend you set the following ΔT temperatures:
• 30°C to roast red meat with a core temperature between 45°C and
55°C;
• 25°C to roast white meat with a core temperature between 75°C
and 85°C.
