Models with parallel rollers (rectangle shaping)
Put a clean baking-tin under the rolling machine. It should be big enough to adapt to the steel feet.
1) Press the control treadle to set the machine rollers going (for models without treadle push the START button on the circuit
board to start the machine and the STOP button to stop it.)
2) Position the dough ball so that it passes smoothly through the top rollers (shape one side like a wedge to simplify the
operation).
3) After this step the dough thickness is reduced.
4) For intermediate and high weighed dough discs it is then necessary to keep spreading the dough by hand,
accompanying it towards the lower rollers, until the dough comes out and falls onto the baking-tin.
N.B. In the single roller models (M35, M42 and M50) the dough is pressed just once, as there is just one roller.
Shutting down the mixer
To switch off the rolling machine follow the procedure below:
•
release the pedal control (in the models that provide it);
•
press the STOP key.
7 MAINTENANCE AND CHECKS
Safety precautions
Before any maintenance operation, take the following precaution measures:
•
Make sure the rolling machine is off;
•
Make sure the rolling machine is not powered;
•
Make sure the power supply cannot be accidentally reactivated; remove the plug from the power socket;
•
Use the personal protection devices envisaged by Directive 89/391/EEC
•
Do not use chemicals to clean the mixer;
•
Do not use water jets or high pressure washing devices;
•
Do not use abrasive materials or sponges to clean the bowl and the rolling machine metal and plastic parts;
•
Install and enable all protections and safety devices once the maintenance or repair operations are finished and
prior to starting back up the mixer.
Routine maintenance and cleaning in charge of the user
Before performing any maintenance, disconnect from the power supply and follow the "Safety precautions".
To keep the rolling machine always clean and efficient, the routine maintenance must be carried out according to the
schedule given below:
1) Using a suitable brush, perform a first removal of flour and dough remainders;
2) Remove the two protections, the balancing device and the chute;
3) Release the dough scraper springs.
4) Pull out the dough scrapers.
