MAINTENANCE

The components which require normal maintenance can be
accessed by opening the control panel, the left-hand side panel,
the rear panel and the boiler protection panels.

ANOMALIES AND POSSIBLE SOLUTIONS

Anomalies can arise even during normal working conditions!
The burner doesn't light up. Possible causes:
- The ignition electrode "A" (fig.11 convector; fig. 12 boiler) is
wrongly positioned ( realize a distance of 3 to 4 mm from burner,
see Det.A) or is badly insulated.
- The automatic ignition device or its wiring are damaged.
- Insufficient pressure in the gas line:
- The pressure switch has intervened indicated by the oven
chamber light turning off.
- The gas valve is defective.
- The controller is damaged.
- Fuse F2 has intervened, see wiring diagram.
- The oven chamber thermostat probe is defective, see error
configuration EPt1.
- Oven temperature or steam generator temperature limit switch
has intervened.
- The water supply to the appliance is interrupted.
- The boiler drainage open/closing mechanism is damaged.
The burner goes out. Possible causes:
- Pressure drop causing the intervention of the pressure switch,
see above.
- Defective valve.
- The flame detection electrode "B" (fig.11 convector; fig. 12
boiler), is wrongly positioned (they should be 10 and 18 mm
distant from the burner respectively, see detail "B") or is badly
insulated.
- The flame control device is damaged.
The oven chamber temperature thermostat is erratic. Possi-
ble causes:
- The controller is defective.
- The oven chamber temperature probe is dirty, defective or
interrupted, see error configuration EPt1.
The oven switches off. Possible causes:
- Fuse F1 has intervened due to the motor overheating.
- Fuse F2 has intervened due to auxiliary circuit component
damage.

INSTRUCTIONS FOR THE REPLACEMENT OF
SELECTIVE COMPONENTS
(Operations to be carried out by an authorised installer)
By removing the rear panel and the left-hand side panel access
can be gained to the following components:
- Vapour damping system solenoid valve with flow regulator.
- Gas valve.
- Command circuit cooling ventilator fan.
- Oven chamber ventilator fan.
- By-pass probe activating the vapour damping system and the
convection burner.
- Gas pressure switch.
Removing the boiler protection plates from the oven bottom will
give you access to the following components:
- Injectors, air-shutters, Ignition electrodes "A" and detection
electrodes "B" for the steam generator and convection burners.
By opening the control panel access can be gained to the
following components:
- Electronic P.C.B. card.
- Main power supply terminal board (access can also be gained
from the bottom outside the appliance).
- Oven chamber temperature limiting thermostat.
- Steam generator temperature limiting thermostat.
- Fuses.
- RIF filter.
- Flame control device.
- Burner resetting button.
- Door safety microswitches.

OPERATING INSTRUCTIONS

The appliance is destined specifically for industrial use
and must be used and supervised, during operation, by
trained personnel.

INSTRUCTIONS FOR THE USER

CAUTION:
• Read carefully the contents of this manual as it contains
important safety information regarding the installation, use and
maintenance of the appliance.
• Keep this manual in a safe place for the eventual use by other
operators.
• The installation of this appliance and its eventual adaption to
work off other types of gas must be carried out by qualified
persons in accordance with the manufacturer's instructions.
• Switch off the appliance in the case of failure or irregular
running. Have the appliance repaired by a technically qualified
person authorized by the manufacturer and using original spare
parts.
If the above is not respected the safety of the appliance could be
jeopardized.
2.
INDICATIONS REGARDING THE USE OF THE
APPLIANCE
Foreword
This appliance must be used exclusively for the purpose for
which it has been made; that is to say for cooking food in the oven
as described below. Any other use is to be considered improper.
The oven permits operating temperatures of 25 to 300 °C.
The appliance can be used for the following:
• For cooking cakes, sauces, pizzas, meat, fish and vegetables,
for au gratin, for defrosting and reconditioning chilled or frozen
foods and for preparing drinks at thermostatically controlled
temperatures of between 15 to 99 °C , (vacuum cooking).
• For stewing and steaming meat, fish, vegetables and fruit with
uniform cooking throughout the oven.
- For the rapid defrosting or refreshing of drinks using the
reconditioning cycle.
• When loading the oven make sure that a 40 mm space is left
between trays in order to facilitate good air circulation.
• Some appliances are fitted with a meat probe which monitors
the temperature at the core of the product. (0 - 99°C).
• Avoid seasoning dishes while they are in the cooking
chamber especially when using the moisture cycles.
• During superheated steam cycles you are advised not to
exceed temperatures of 210°C as higher values could damage
the door sealing gaskets.

CONTROL PANEL DESCRIPTION (fig.3)
A- On/Off switch O/I (with green indicator lamp)
- press this button to switch on the oven (the green indicator lamp
lights up accompanied by an acoustic buzzer)
- to switch the oven off press this button for 1,5 seconds (the
green indicator lamp will turn off accompanied by 2 consecutive
beeps).
B - Selector switch and indicator leds controlling the two cooking
stages which can make up the program
This consists of two leds indicating the stages and a button which
advances the stage indicator by one position each time it's
pressed.
The leds have the following function colours:
- Red, indicating either the active stage during operation or that
the cooking parameters are being modified
- Green, indicating a completed cooking stage or one which has
yet to start.
When the program is only using one cooking stage led "2"
remains off and led "1" is active in red.
After the cycle begins "START" the passage from sequential
stage 1 to sequential stage 2 is automatic and is signalled by a
brief sounding of the buzzer.
C - START/STOP button (relative to the cooking cycle, indicated
by a yellow indicator lamp. It's function is similar to the On/Off
switch "O/I")
