6.8 "COOK & HOLD" cooking cycle
This cycle made of two sequential phases, has the following
characteristics in order to give the optimum cooking (COOK) and
(HOLD) conditions and is chosen for large pieces of food:
a)Reduced power & fan speed.
b)In the phase of increased temperature the fan works continuously
(reduced speed). When the temperature inside the chamber is
on the set temperature, the fan alternates 5 seconds ON and 25
seconds OFF.
INSTRUCTIONS FOR SETTING A "COOK & HOLD" CYCLE
1-Turn oven ON & pre-heat the chamber (see instructions
enclosed).
2-Press COOK & HOLD button.
3-Choose a cycle ie Convection or Steam (flashing led).
4-Set the chamber temperature on the first cooking phase (COOK)
(normally approximately 130°C).
5-Set the cook time or the food probe temperature (meat probe).
If you choose one of the following functions:
- The cook time can be set to a specific time ie 2 hours after which
the cook cycle will stop and pass automatically to the HOLD
phase.
- The food temperature probe will be set on about 70°C (always
higher than 65°C). Once the set value is reached and read on the
meat probe visualizer, the cook cycle will stop and pass
automatically to the HOLD phase.
6-Press "PHASE" button (the second led turns red, while the first
one turns green).
7-Press again COOK & HOLD button.
8-Choose a HOLD cycle ie Convection or Steam with reference
to the one previously chosen (flashing leds).
9-Set the oven chamber temperature on the second HOLD phase
on about 70°C (always higher than 65°C).
10-Set the HOLD time which can be defined or checked by the
operator in the "Cont" setting. We do not recommend a time
greater than 3/4 hours for meat with a "one piece" weight of
between 12 - 18 kg. Larger pieces of meat can be held for more
hours, but we do not recommend using COOK & HOLD for
pieces of meat smaller than 12 kg.
11-Press start button.
The red light will indicate the phase is on the COOK cycle, while
the second one turns green. When the cycle moves automatically
to HOLD, the first light turns green whilst light No 2 turns red. There
is also an audible beep at this point.
Note: When the cylce is in progress, all the setting parameters of
the progress (red led), awaiting or already carried out phase
(green led) can be visualised by pressing the "visualisation
parameters" button. The visualisation lasts for a few seconds and
at this point the led of the phase flashes. The visualization can be
reached by repressing the "visualisation parameters" button.
6.9 Switching off
• To interrupt an activated cooking cycle press the "STOP" button
for about 1,5 seconds and the relative led will turn off.
• Press button "A" for about 1,5 seconds to switch off the power and
the green indicator light will then turn off
• Switch off the power at the mains and close the gas and water
cutoff cocks.

SWITCHING OFF IN CASE OF FAILURES

When faced with operational failures switch off the appliance:
• Switch off the power at the mains and close the gas and water
cutoff cocks.
• Contact an authorised after sales service centre which uses
trained personnel.

CLEANING AND MAINTENANCE

• Before carrying out any cleaning and maintenance operations
disconnect the power supply at the mains.
• At the end of each day, clean the oven chamber using suitable
products and following the manufacturer's instructions.
To this end the appliance has a "CLEAN" button located on the
control panel (fig.3) with which to clean the oven chamber in
successive stages.
This feature is used as follows:
Foreword: The cycle only works correctly when the temperature
level in the oven chamber is less than 70°C (read on the display),
therefore the oven chamber will have to be cooled down (see the
relative paragraph) if the temperature is greater than the mini-
mum.
1 - Press the - CLEAN - button for 1,5 seconds with the door
closed, the relative led will light up indicating the start of a steam
cycle lasting for 5 minutes at the end of which a buzzer will sound.
2 - Open the oven door and spray a suitable product over the
surfaces which are to be cleaned.
3 - Close the door and the indication "H2" will appear on the
display. This indicates the pause time, preset to 120 seconds,
which is required for the cleaning agent to take effect.
At the end of the pause time a new steam cycle lasting 10 minutes
will start at the end of which a buzzer will sound and the led
"CLEAN" will turn off.
4 - Open the door and carefully rinse the oven chamber with the
aid of the ventilator fan .
• To facilitate cleaning operations remove the wheeled rack
supports (when present) or the lateral diffusers.
• Dismantle the diffusers as follows:
- Lift up the diffuser, free it from the holding pins by rotating it and
extract it by freeing the "L" shaped hook from the slits in the oven
chamber wall. Replace the components in the reverse order.
Dismantle the oven chamber extractor wall "A" (fig.18) as
follows:
- After having removed the lateral diffusers rotate the two nuts "D"
(fig.18) on the upper threaded pins until they come to rest against
the top of the oven chamber.
- Lift up the extractor wall and free it from the two lower pins in the
oven wall.
- Press down on the component to free the two upper threaded
pins.
Note: The four arrows on the extractor wall indicate the position
of the holes in correspondence with the lower and upper pins.
Replace the components in the reverse order and rotate the nuts
until they come to rest against the oven wall "D" (fig.18).
• If fat filters are installed "B" (fig.19) then these should be
cleaned at least every three cooking cycles. To facilitate the
cleaning operation the grid can be dismantled by removing the
elastic seal inserted around the frame of the filter "P" (fig.19). The
elastic can be extracted by first pressing the two ends together
as shown in the figure.
If the filter is not cleaned it may lose its efficiency giving rise to
various cooking problems.
• Clean the stainless steel surfaces daily with warm water and a
neutral soap; rinse thoroughly and dry carefully.
• Avoid using common wire wool, wire brushes or other such
implements as ferrous particles can deposit on the surfaces
causing rust spots due to their oxidation.
• If the appliance is not going to be used for an extended period
of time then the following procedure should be followed:
- Disconnect the power and water supply.
- Apply a protective film of Vaseline oil on the stainless steel
surfaces.
- Make sure that the premises is aired regularly.
An excessive build up of limescale is signalled by the lighting up
of the led "P" (fig.3), signifying the need to descale the boiler.
8.1
PERIODIC MAINTENANCE OF THE STEAM
GENERATOR
Every time the led "P" lights up the steam generator must be
descaled.
The manufacturer accepts no liability for situations arising
from failure to comply with these safety rules.
Descaling can be carried out using 2 methods:
- using pure vinegar 100%;
- using a descaling agent (scrupulously observing the below
mentioned instructions).
To carry out these operations the appliance must be switched
on (i.e. led "A" lit up).
