8.1.1
The method using pure vinegar
• Close the water stop cock.
• Drain off the generator completely by moving the drainage lever
"L" (fig.13) to the left and then close the boiler by moving the lever
back to the CLOSED position (all the way to the left).
• Unscrew the plastic cap on the steam generator access pipe "T"
(fig.4) and pour in 6,5 litres of pure vinegar.
• Open the water stop cock.
• Switch on the oven in the steam mode for 16 minutes.
• Switch off the oven and wait for 60 minutes.
• Switch on the oven for another 2 minutes.
• Switch off the oven and wait for 60 minutes.
• Open the water drainage valve.
• Rinse the generator using a rubber hose inserted into the access
pipe "T" (fig.4) keep pouring water in until clean water begins to
flow out of the drainage pipe.
• Replace the cap and close the boiler drainage outlet by moving
the drainage lever "L" to the "CLOSED" position (fig.13).
8.1.2 The chemical descaling method
Descaling using chemical products must be carried out following
the supplier's instructions.
For example when using the descaling agent Ecolab "STRIP-A-
WAY", proceed as follows:
• Follow the instructions laid out in the previous paragraph and
pour in 1,5 litres of descaling agent and 5 litres of water through
the tube "T".
• Switch on the oven in the steam mode for 12 minutes.
• Switch off the oven and wait for 40 minutes.
• Turn the boiler drainage lever "L" (fig.13) to the open position in
order to drain the boiler.
WARNING
Rinse the steam generator several times using a rubber hose,
keep pouring water through the pipe "T" (fig.4) until clean water
begins to flow out of the drainage valve and all traces of scale
have been eliminated.
• Replace the cap and close the drainage valve using the lever
"L". It is good practise to switch on the oven (in the steam mode)
and allow it to work for 15 to 20 minutes after carrying out this
procedure.
It is advisable to periodically check the appliance (at least once
a year). To this end we advise you to obtain a maintenance
contract.
Replacing the oven chamber light (fig.14)
Should the internal light burn out it can be replaced as follows:
• Switch off the power at the mains.
• Remove the four screws fastening the ring "A" and extract the
glass "V" together with the gasket "G".
• Unscrew the halogen lamp "L" and substitute it with one that has
the same characteristics (12V - 20W - 300°C).
• Replace the protective glass correctly inserting it in the gasket
and fasten the ring down using the four screws. Grease the gasket
using silicon grease suitable for use with foodstuffs.
Replacing the door gasket (fig. 15-16)
N.B.: The oven door gasket is a component which is subject to
wear and tear through normal use. It is therefore advisable to
replace it as soon as the first indications of hardening, cracking
or breakage are noticed.
To replace the door gasket proceed as follows:
• Extract the gasket from its housing and clean it of any silicon
which may have remained.
• Apply a small quantity of silicon compound at the points "1" and
"2" (fig.15) around the gasket support frame.
• Position the new gasket by first inserting the internal profile "1"
under the border of the support frame starting from the corners (fig.
15.1).
• Insert the external profile "2" under the border of the support
frame using a hook shaped tool see figures 16 and 16.1.
Condensate drip tray (fig.13)
If the condensate drip tray "R" is full of water, check that the rubber
piping and pipe joints are free from obstructions and dirt. This
should be carried out by removing the pipe "T" from its housing and
thoroughly cleaning it.
The condensate drip tray "R" can be extracted frontally after
having removed the drainage pipe "T" and the fastening screws
from the lower external part of the oven chamber "F".
A condensate drip tray located under the door collects the drops
of condensation when the door is open. It should be drained off
through the hole into the basin "R" when the door is closed.
Cleaning the oven chamber drainage pipe (fig.17)
Periodically clean the oven chamber drainage pipe through the
oven chamber drainage outlet "S".
Cleaning the internal surfaces of the oven door glass (fig.17)
This operation should only be carried out when the door glass
has cooled down and not using abrasive detergents or materials.
Access to the inner lining of the door glass can be gained by
opening the hinged glass.
• With the door open rotate the two holding pieces "F" through
180° (upper and lower) using a coin or a round pointed knife.
Attention
The opening angle of the door glass is limited by a catch
located on the lower hinge

9. WARNINGS

• When cleaning the appliance do not use products containing
chlorine, bleach, chloric acid etc. even if diluted.
• Do not use corrosive substances such as hydrochloric acid
when cleaning the pavement surrounding the appliance.
• Do not attempt to modify the aeration capacity which affect the
combustion levels.
• Have the burners, flame levels and related components checked
every six months by a specialised technician.
